Fava!
A delicious traditional dish straight from Greece! Creamy and so tasty! Moreover vegan and gluten free!
It is ideal as a starter or even as a main course dish. And this recipe will remind you of the fava you tasted here in Corfu! Do not forget to serve using with a drizzle of extra virgin olive oil from Corfu.
Simple ingredients! Take a note!
- 500g yellow split peas (18 ounces)
- 3 red onions, roughly chopped
- 2 cloves of garlic, chopped
- 1 lt warm water (3 and 1/3 cups)
- juice of 2 lemons
- 1/3 of a cup olive oil
- thyme
- salt and freshly ground pepper
Rinse with plenty of water while you heat a large pot at a medium heat. Add some extra virgin olive oil from Corfu, chopped onions, garlic and some fresh thyme and sauté. By the time the onions start to caramelise add the peas and blend. Add the warm water and the olive oil, season with salt and pepper and simmer with the lid on for 40 to 50 minutes.Watch out! Stir or it can stick on the bottom of the pot! You will see the peas becoming mushy. Do not forget to remove the white foam with a slotted spoon.
When done move the mixture in a food processor and mix with the lemon until they are smooth and creamy like puree.
Serve the fava with extra virgin olive oil from Corfu, diced onion and some capper or chopped parsley. Enjoy.
